The Culinary Instructor works across departments to coordinate and deliver culinary instruction for the YWCulinary workforce development program and oversees the preparation of healthy dinners for domestic violence shelter residents. The position develops and implements the YWCulinary curriculum and provides direct training to program participants seeking entry to food service sector and assists in identifying and cultivating culinary internships and job placements. The instructor leverages the YWCulinary program to the greatest extent possible to prepare shelter dinners, providing large scale meal production experience for culinary students. The position plans the shelter dinner menus, directly prepares meals as needed, trains and supports volunteers assisting in shelter meal preparation, and advises the Residential Operations Manager on food procurement, and oversees the planning of shelter vegetable gardens as a source of fresh produce for shelter meals.

The position works closely with trauma survivors and is responsible for maintaining a warm, welcoming, and supportive environment for students, shelter residents, and volunteers.

Culinary Program Instruction (50%)

  • Develops YWCulinary food service training curricula aligning with current trends, best practices, food safety and sanitation guidelines.
  • Teaches lesson plans that translate industry expectations, skills, and concepts into an interactive learning environment through demonstrations of proper technique and procedures in a classroom setting to diverse populations.
  • Objectively assesses work produced by students using standardized forms of assessment.
  • Prepares all food using prescribed recipes while ensuring adherence to all safety and sanitation standards.
  • Ensure daily cleanliness of kitchen in accordance with all health standards.
  • Coordinates the transport, storage, or discarding of all food in accordance with safety and sanitation standards.
  • Provides professional advice and mentoring for students pursuing careers in the food service industry.
  • Orders food and materials needed for instruction.
  • In collaboration with supervisor, develop annual work plans to expand and deepen program impact and ensure the delivery of high-quality instruction preparing graduates for employment.
  • Contributes to the development and implementation of comprehensive job development and placement services.
  • Assists in developing effective informational tools to share with prospective students.
  • Contributes to the development of program outcomes, benchmarks, and indicators and as requested collects and reports out on student data.
  • Submits monthly activity reports and contributes to grant proposals or funder reports as requested.
  • Collaborates with Residential Operations Manager to coordinate the planning of an on-site vegetable garden for the benefit of the culinary and shelter food programs.

Shelter Meal Preparation (40%)

  • At the direction of the shelter's Residential Operations Manager, oversees certain aspects of the domestic violence shelter dinner program including developing menus, meal preparation, managing equipment, and maintaining a commercial kitchen in accordance with all health and safety standards.
  • Offer input to the Residential Operations Manager on food procurement and strategies to efficiently provide breakfast and lunch to all residents.
  • In partnership with the Special Events and Volunteer Coordinator and Residential Operations Manager, trains and supports a cohort of culinary volunteers who assist in meal preparation and garden maintenance activities.

Community Outreach (5%)

  • Assist in identifying, cultivating, and maintaining strategic community partnerships that could contribute to and enrich food service training curricula and job placement, and advocates within those organizations for the benefit our clients.
  • Through active community outreach supports participant recruitment goals.
  • Assists in the recruitment and support of a culinary advisory council comprised of industry leaders that will offer support to YWCulinary.

ADDITIONAL DUTIES (5%)

  • Attends regular supervision and team meetings.
  • Regularly meets with the Residential Operations Manager to coordinate meal preparation and support volunteers.
  • Attends agency meetings, staff trainings, and agency events as requested.
  • Pursues professional development.
  • Understands and adheres to all of YWCA Evanston/North Shore procedures and policies as communicated in the YWCA Employee Handbook
  • Performs other job duties as assigned by management.



MINIMUM QUALIFICATIONS

Education: High school diploma/GED

Experience and/or Training:

  • At least 5 years of progressive culinary experience
  • Culinary instruction experience in a group setting
  • Experience developing menus and sourcing and purchasing food

Licenses/Certificates:

  • ServSafe?Food Handler Certification within 3 months of employment??
  • Certified Food Protection Manager within 6 months of employment
  • Valid driver's license
  • Successful completion of the Illinois 40-Hour Domestic Violence Training Certificate within 6 months of employment?
  • First Aid/CPR within 6 months of employment

Technology/Equipment:

  • Intermediate proficiency in Microsoft Office Suite
  • Mastery over commercial kitchen equipment

PREFERRED QUALIFICATIONS

Education: Completion of a culinary arts training program/certificate

Language Proficiency: Proficiency in Spanish

Experience and/or Training:

  • Experience hiring and managing food service staff
  • Experience working with marginalized populations
  • Familiarity with trauma informed care principles

Licenses/Certificates:

  • Proof of auto insurance
  • ServSafe Food Handler Certificate
  • Certified Food Protection Manager Certificate
