The Cook is responsible for

planning and preparation of all guests and crew meals following the prepared menus.  The ideal candidate for this position will have a minimum of 5 years’ experience in the Hospitality or

Retreat House Industry and be dedicated to delivering appetizing meals in an efficient manner.

Qualifications

Five years’ minimum experience required in the Hospitality or Retreat House industry.  Knowledge of special diets and preparations such as low sodium, heart healthy, diabetic, gluten free and vegetarian strongly preferred.

ServSafe Certification is mandatory.

About the Role

We are looking for a Cook to prepare delicious meals for our guests in the Retreat House. There are 27 single guest rooms available. Homestyle cooked meals are served to our guests. The Cook will ensure that all menus are followed, food is properly prepared, meals are served on time, and

food is properly rotated with leftovers being used as quickly as possible.  You must be familiar with sanitation regulations. Must be able to read, write, speak the English language the ability to speak Spanish would be a plus.

Responsibilities    

The Cook will handle the preparation of all guest and crew meals.   Prepare and cook breakfast, lunch and dinner; meat and fish dishes, vegetarian and gluten free options for the guests. Primary

responsibilities include butchering, prepping, portioning, and cooking meals for guest and crew.      

Responsible for overall kitchen management including food ordering, receiving, collecting and

inventory.  Maintaining kitchen sanitation and safety standards, ensuring that all work/storage areas are clean, free of hazards and properly managed, will include washing pots and

pans, etc.  Prepares meals, desserts and snacks in accordance with the posted menu schedule·        

Ensure that all meals are prepared and presented according to Retreat House standards        

Exhibits flexibility in last minute changes, such as dietary restrictions. Set up the kitchen with cooking utensils and be able to operate all kitchen equipment safely and effectively. Equipment may include: meat slicer, food processor, mixers, ovens, grills, dishwashers, dumb waiters and steam tables.        

Responsible for cleaning of preparation/execution areas at the end of your shift.   Dishwashing of

all pots and pans to ensure kitchen and counters are kept clean and organized.        

Study each menu or recipe and gather all necessary ingredients.  Cook food in a

timely manner. Inform Retreat House Manager of guest menus. Slightly modify recipes to meet guests needs and requests (e.g. gluten free or vegetarian).  Check freshness of food and log out-of-date items before discarding.  Maintain par levels, order food required for each group.  Organize freezer, refrigerator, storeroom, kitchen tables and counters.  Ensure compliance

with all health and safety regulations within the kitchen and dining room areas. Maintain

inventory and budget control

Skills        

Proven work experience as a Cook        

Hospitality experience a plus        

Hands-on experience with various kitchen equipment       

Knowledge of culinary, baking and pastry techniques      

Ability to remain calm and undertake various tasks        

Excellent time management abilities    

Up-to-date knowledge of cooking techniques and recipes    

Familiarity with sanitation regulations   

Ability to lift 50lbs on a regular basis         

The ability to stand for at least 80% of the scheduled shift         

Good supervisory skills and ability to work with others.         

Ability to get along with co-workers and support a team environment.     

Ability to communicate with the Retreat House Manager, pantry team members and the

Business Office. Must be able to stay calm and clear headed under stressful situations.

Benefits:   Health Benefits after 90 days.  Employee will be required to pay a modest amount towards health benefits

Schedule:  The position works on a split shift to cover the responsibilities of the Retreat House

kitchen.   Week-ends a must.  Hours vary based on business – shifts could be 8 – 10 hours. 

Breakfast 8:30am, Lunch 12:30pm and Dinner 6:00pm. Dinner on the night of arrival is 6:30pm.

Vacation: -  The first 3 full weeks in July - Vacation will be paid at weekly rate.  

Experience:   Cook – 5 years minimum

License:   ServSafe license required

Clean Driver’s License

Work Authorization:   United States required
